Gluten Free Scones

Ingredients

  • 2 tsp Finax Psyllium
  • 2,5 dl unsweetened yoghurt
  • 240 g (ca 4-4,5 dl) Finax Glutenfri Mjölmix
  • 2 tsp baking powder
  • 0,5 tsp salt
  • 75 g margarine

Is there anything better than freshly baked gluten-free scones?

 this is how you do:

  1. Set your oven at 250º C.
  2. Start by mixing in Psyllium with the yoghurt and leave the mix for a few minutes.
  3. Measure out your flour mix, baking powder and salt. Add margarine and mix into a lumpy mass.
  4. Then add the yoghurt-mix and quickly mix together to form a dough.
  5. Separate the dough into 6 equal pieces and shape into round scones.
  6. Place the pieces on baking paper on a baking tray and cut X´es on the tops with a knife. You can also poke the tops with a fork.
  7. Bake in the middle of the oven at 250º C for 8-10 minutes.
  8. Serve fresh from oven – perhaps with a nice fruit jam.

TIPS

  • Try adding 1,5 – 2 dl shredded cheese when you mix the dough.
  • Feel free to use paper cup baking forms to give perfect shape to your muffins.
