Coconut cakes

Ingredients

  • 150 g margarine at room temperature
  • 1 1/2 dl sugar
  • 2 eggs
  • 1 dl Finax Glutenfri Mjölmix (60g)
  • 1 tsp baking powder
  • 125 g coconut flakes
  • 50 g chopped nuts
  • 50 g chopped dark chocolate (or 50g raisins)

Coconut cakes

Quick and easy recipe for cakes in muffin cups – do try it! About 25-30 pcs.

This is how you do:

  1. Set your oven to 200º C.
  2. Beat margarine and sugar together until light and airy, then add egg and flour mix with baking powder.
  3. Mix in the coconut, nuts and chocolate (raisins). Place the dough in muffin cups before baking in the middle of the oven for 10-12 minutes.
