Baking without gluten can be a real challenge even for the experienced baker, as gluten free flour and flour mixes have very different properties than normal flour. Baking rolls might be one of the most challenging feats because gluten free dough can be difficult to shape and form. It is important not to try forcing and stretching the dough but, rather, to gently work to shape the dough with your hands.

It is equally important to all the time maintain the moisture of the dough to ensure that your bread rolls will not end up being dry. One useful tip is to add Finax Psyllium, which helps bind moisture in the dough and make it more smooth and workable – thereby easier to form as you want. Another neat trick is to let the yeast raise the dough under the cover of plastic film, rather than a cloth, as this will prevent dry spots in the dough, which might otherwise occur with gluten free dough.
